MATASSE OF CAPOSELE
Matasse is a typical homemade pasta made from durum wheat semolina and soft wheat flour. It comes in the form of strands, varying in thickness and length. Traditionally, it is served with a slightly spicy sauté of chickpeas, garlic, and dried peppers. The taste is unique. Currently, it is produced on an artisanal basis (in addition to being made in households for personal use) and distributed to local restaurants; it has also been available vacuum-packed for some time.

MUFFLETTO
Muffletto is a type of fresh bread, similar to bread made with pizza dough; the dough is based on potatoes and flour. It is a round loaf, about 25 cm in diameter and 5-6 cm thick. The color is similar to that of bread made from pizza dough. It is a very soft bread, with a delicate taste and a typical aroma. It should be consumed fresh, just out of the oven; it is sold directly from the bakeries, along with regular bread.

AMARETTO
The amaretto of Caposele, a town in the province of Avellino, is a round, dark-colored biscuit, about 5-6 cm in diameter and 1-2 cm thick. The biscuit is thinner at the edges and has a distinctive flavor of toasted hazelnuts, completely different from commercial amaretto. The ingredients are hazelnuts, sugar, and eggs. It is sold packaged in trays or sealed plastic bags. The hazelnuts used are of the San Giovanni and Mortarella varieties, which are particularly common in Caposele.
